九州・沖縄郷土料理紀行 - 熊本県 - 肥後ずいき
ずいきとはさといもの茎のことで、「芋茎」「芋苗」と書く。
古くから熊本産のものが極上とされてきた。
旬は秋で、赤ずいきと青ずいきがあり、えぐみの少ない赤ずいきの方が食用に向く。油揚げと合わせた煮物、あるいは酢の物にして照り焼きや揚げ物に添える。
昔、加藤清正が熊本城を築く際、畳のしんになる床をずいきで作ったのは有名。いぎ籠城戦のとき、保存の効くずいきを非常食にあてるためである。
